The Vineyards
Our elevation creates warm days and cool nights—perfect for growing the varieties we have chosen. We grow Cabernet Sauvignon, Syrah, Petite Syrah, Mouvedre, Grenache Noir, Grenache Blanc, and Sauvignon Blanc.
The Winemaking
We harvest the grapes at dawn, or earlier, and press them that day. The reds are fermented in the winery in open bins and are then aged in French oak barrels for a minimum of eighteen months. The Sauvignon Blanc and Grenache Blanc are fermented in cooled steel tanks. At the time chosen to bottle, the wine is gravity fed into the bottling equipment. After bottling, the wine is aged at 55 degrees in our cellar until it can be enjoyed by those of us who love the life of good food and wine and great company.
